For the dough:
3/4 cup all-purpose flour (140 g)
250g unsalted butter or margarine
3 1/4 cups all-purpose flour (420 g)
2 large eggs
2 tablespoons grated lemon zest
For the topping:
1 kg peeled, cored, and chopped apples, divided into 4 parts
1/2 cup all-purpose flour, depending on apple acidity
1/2 cup water or white wine
1 cinnamon stick
1 orange peel

Mix the dough ingredients at room temperature in a bowl
Knead with your hands and spread a thin layer (not too thick) onto an ungreased 42 x 28 cm baking sheet
Cook the apples with the other topping ingredients over low heat until they're half-cooked
Drain well, slice thinly, and arrange on top of the dough
Bake in a preheated oven at 180°C and bake thoroughly
If desired, remove from the oven and brush with apricot glaze
Serves 6-8 people.
