Mix the pudding flavor with milk
In a separate bowl, beat the butter until fluffy
Gradually add the sugar, eggs, and salt to the butter mixture
Sift together the flour and yeast, then gradually add it to the egg mixture
Add the dissolved pudding flavor and banana extract to the mixture
Butter a cake pan with melted butter and dust with all-purpose flour
Spread half of the batter in the prepared pan and smooth with a wet spoon
Top with sliced bananas and drizzle with lemon juice, then sprinkle with cinnamon
Cover with the remaining batter, spreading it evenly with a wet spoon
Finish by topping with the remaining bananas, lemon juice, and cinnamon
Bake at moderate temperature (170°F) for 1 hour or until a toothpick inserted in the center comes out clean
Let cool before removing from pan
If desired, dust with confectioner's sugar while still warm.
