Soak the gelatin in cold water and reserve
Then, mix well the pineapple chunks with orange juice, powdered sugar, and egg yolks
Next, heat over medium heat, stirring constantly until it reaches a boil
Remove from heat, add the softened gelatin, and mix well
Let cool until the mixture thickens slightly
Then, fold in the beaten egg whites, and fill the tart shell
Let cool completely, and garnish with whipped cream chantilly, pineapple rings, and cherry maraschino.
