Prepare the dough: In a bowl, combine the flour, butter, and salt
Knead until smooth
Wrap with plastic wrap and refrigerate for 30 minutes
While this is happening, prepare the filling: Cut each zucchini into 3 pieces and remove the pulp
Place in a pan with boiling water and cook until tender but still slightly crunchy
Drain and reserve
In a separate pan, heat the olive oil, add the chicken, season, and add 1/2 cup of water
Simmer until the chicken is cooked through
Chop the spinach leaves finely
In a pan, heat 1/2 cup of olive oil, add the onion and spinach, season, and cook for 3 minutes or until the onion is tender
Add the cooked chicken and Parmesan cheese
Process until smooth. Reserve
Prepare the sauce: In a medium pan, combine the milk, flour, butter, Parmesan cheese, eggs, and salt
Stir well
Simmer over low heat, stirring constantly, until thickened
Remove 2/3 cup of the sauce and add to the chicken filling
Mix well
Assemble the cake: Place the filling in a bag or piping bag
Stuff each zucchini piece with the filling
Top each piece with some of the remaining sauce
Cover with the dough, folding the edges inward
Press gently to seal
Bake in a preheated oven at 400°F (200°C) for 45 minutes or until golden brown
Let cool slightly and serve
Cut into 8 portions.
