Dough
1 3/4 cups all-purpose flour
3/4 cup unsalted butter, at room temperature
1/3 cup granulated sugar
1/3 cup mashed bananas
1/2 teaspoon vanilla extract
1 egg
1/2 teaspoon salt
Filling
1 cup heavy cream
2 tablespoons unsalted butter, softened
1 tablespoon all-purpose flour
1 tablespoon rum
1 teaspoon vanilla extract
3 medium-sized bananas, sliced into 1 cm thick rounds
3 eggs
1 ounce semi-sweet chocolate chips, chopped
1/2 ounce milk chocolate chips, chopped
For dusting
11/2 tablespoons unsweetened cocoa powder

1/2 ounce milk chocolate chips, chopped

Accessories
1 removable-bottom tart pan with a 24 cm diameter
Dough
Beat the butter and sugar together until creamy
Add the egg and vanilla extract, and mix well
Gradually add the flour, salt, and mashed bananas, beating until smooth
Place the dough in the prepared pan and press it evenly over the bottom and up the sides
Chill for 10 minutes
Preheat the oven to medium temperature
Brush the parchment paper with butter and place it on top of the dough (butter side down)
Fill with cooked rice
Bake for 20 minutes or until the edges start to brown
Remove the rice and paper, and bake for an additional 10 minutes or until lightly golden
Filling
Heat the heavy cream until hot but not boiling
Transfer half of it to a small bowl and add the eggs
Mix well and return it to the remaining cream
Bring it to a simmer over low heat, stirring constantly, until thickened slightly
Add the chocolate chips, butter, and vanilla extract, mixing until smooth
Let it cool
In a separate bowl, mix the banana with flour and rum
Arrange the banana slices on top of the dough
Cover with the chocolate and smooth out with a spatula
Chill for 1 hour
To serve, dust with unsweetened cocoa powder
If desired, serve with additional banana slices.
