5 ripe bananas, mashed

Beat the egg whites until stiff and reserve
Mix the yolks with the sugar in a stand mixer
Add the mashed bananas to the mixture
Mix well until the batter is smooth
Gradually add the flour mixture and yeast, alternating between wet and dry ingredients, beating continuously
Once the batter is homogeneous, remove from the stand mixer and gently fold in the egg whites
Pour the batter into a greased and floured round cake pan
Bake the cake until done, then let it cool on a wire rack
Once cooled, dust with granulated sugar and nutmeg to taste.
