Cake Mix
1 package of chocolate cookie crumbs
50g of softened butter
2 tablespoons of cold water
Filling
6 sliced bananas
1 cup of sugar
Juice of 1/2 lemon
Mousse
1 envelope of unflavored gelatin
3 large egg whites
1/4 cup of sugar
300g of milk chocolate chips
1 can of heavy cream
3 tablespoons of rum
Cake Mix

Cake Mix
Mix the cookie crumbs with butter and water until a crumbly mixture forms
Press the mixture into the bottom and sides of a 22cm diameter cake pan
Bake at 200°C for 10 minutes
Filling
In a skillet, place the banana slices, sugar, and lemon juice
Cook over medium heat until the sugar caramelizes and the bananas are tender
Let cool
Mousse
Hydrate the gelatin according to package instructions
Let it cool
Beat the egg whites until stiff peaks form
Add the sugar
Melt the chocolate, mix with heavy cream, gelatin, rum, and whipped eggs
Assembly
Place the banana slices on top of the cake mixture
Top with the mousse
Refrigerate to set.
