Peel the bananas and cut them in half lengthwise
Melt 3 tablespoons of butter and olive oil in a skillet and fry the banana slices until golden brown
Drain on paper towels
Arrange the fried banana slices in a medium-sized baking dish and sprinkle with cinnamon
Beat the egg yolks with the remaining butter until light and fluffy, then place over the bananas
Beat the egg whites until stiff peaks form, then fold into the flour and add to the banana mixture
Place the meringue-topped cake in a preheated oven at 400°F (200°C) for about 15 minutes, or until lightly browned
Serve warm or chilled
