Mashed Filling
1/2 kg of peeled and cut sweet potatoes into 4 pieces
Salt to taste
1/3 cup of warm milk
1 beaten egg
250g of fried and drained linguiça, chopped fresh
2 tablespoons of chopped parsley
1 tablespoon of chopped green onion
Dough
1 1/2 cups of all-purpose flour
1 teaspoon of salt
1/2 cup of vegetable shortening
3/4 cup of grated Cheddar cheese or similar type
aqua regia (a mixture of water and vinegar) to taste
water for brushing

To make the filling: In a medium saucepan, combine the sweet potatoes with enough water to cover them and 1/2 teaspoon of salt
Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until the sweet potatoes are tender
Drain and mash
Add milk and egg, mixing well
Add linguiça, parsley, and green onion, adjusting seasoning as needed
Let cool
To make the dough: Preheat oven to a moderate temperature (180°F)
In a bowl, combine flour and salt
Add vegetable shortening and mix until crumbly
Add grated cheese and mix until just combined
Avoid overmixing
Form into a ball, then divide in half, with one piece slightly larger than the other
On a lightly floured surface, roll out the larger piece to fit the bottom and sides of a 9-inch springform pan
Spread the sweet potato filling over the dough, leaving a 1/2 inch border around the edges
Roll out the remaining dough to fit the top of the tart
Place on top of the filling, pressing edges to seal
Crimp the edge of the crust to form a decorative border
Make small cuts in the crust to allow steam to escape
Brush with milk and bake at 180°F for 20 minutes, then reduce heat to 140°F and continue baking for an additional 35 minutes.
