For the dough
3 cups all-purpose flour (360g)
1/2 cup cold unsalted butter, cut into small pieces (100g), 1 tablespoon vegetable oil, 2 eggs, 1 teaspoon salt, and 1/4 cup ice-cold water (60ml),
For the filling
1/2 cup chopped onion (70g), 1/4 cup diced red bell pepper (40g), 2 medium-sized tomatoes (240g), peeled and seeded, diced, 1/3 cup olive oil (80ml), 1 tablespoon chopped fresh parsley, and 1/4 teaspoon salt
600 grams of cheese fillets, 1/4 cup freshly squeezed lemon juice (60ml), 1/4 teaspoon salt, and 3 tablespoons all-purpose flour
1 egg yolk lightly beaten for brushing

Prepare the dough: In a large mixing bowl, combine all the ingredients except for the water
Mix until it forms a crumbly texture
Add the water and gently knead with your hands until it forms a ball
Wrap in plastic wrap and refrigerate
Prepare the filling: In a medium-sized saucepan, cook the onion, bell pepper, tomato, olive oil, and parsley over low heat for about 8 minutes or until the vegetables are tender
Add the cheese, lemon juice, and salt
Increase the heat to medium and cook for about 10 minutes or until the mixture is heated through
Dissolve the flour in water, then add it to the saucepan and cook until it thickens slightly (about 5 minutes)
Let it cool
Preheat the oven to 180°C (medium)
Roll out the dough directly onto the bottom of a 25cm-diameter tart pan
Use a knife to trim the edges of the dough and place the pan on a baking sheet
Shape small rolls with some of the remaining dough
Press them against the sides of the pan until it is covered
Trim the edges
Fill the dough with the cheese mixture
Roll out the remaining dough, place it over the filling, and press the edges to seal
Brush with the beaten egg yolk
Bake in a preheated oven at 180°C for about 35 minutes or until golden brown
Remove from the pan and serve immediately
