For the dough
1 cup all-purpose flour, sifted
2 and 1/2 cups wheat flour, sifted
1 pinch of salt
3/4 cup unsalted butter, cut into small pieces
1 large egg
2 tablespoons vanilla extract
For the filling
360g milk chocolate chips, coarsely chopped
120g semi-sweet chocolate chips, coarsely chopped
1/2 cup unsalted butter, softened
6 room-temperature egg yolks
1 large egg
1/3 cup all-purpose flour
1 pinch of salt
2 tablespoons almond extract, chocolate extract, or hazelnut extract

For the dough

Mix the flour, wheat flour, and salt
Make a depression in the center, add the butter, and mix until it forms a crumbly texture
In a separate bowl, whisk together the egg and vanilla extract
Add this mixture to the dough and mix with a wooden spoon until everything is incorporated
Place the dough on a surface and knead with your palm until it's smooth
Don't overmix
Shape the dough into a ball and flatten it into a 12.5cm diameter disk
Dust with wheat flour and wrap in plastic film
Let it sit in the refrigerator for 1 hour until it becomes firm enough to roll out
Remove from the refrigerator
On a floured surface, roll out the dough (without the plastic film) into a 35cm diameter circle
Carefully transfer the disk of dough to an 8-inch springform pan, leaving the sides with a 5cm height
Press the dough onto the bottom and sides of the pan
Poke the bottom and let it sit in the refrigerator for 15 minutes
While this is happening, prepare the filling: melt the chocolates and butter in a double boiler over hot water (but not boiling)
Mix until smooth and set aside
In a stand mixer, beat the egg yolks, large egg, flour, and salt on high speed for 3 minutes until it thickens
Add the extract and melted chocolate and mix
Remove the dough from the refrigerator and place the filling mixture over the dough
Bake in a preheated oven at 180°C (350°F) for 25 minutes or until the edges are set and the center is creamy
Test by inserting a toothpick into the center of the cake; it should come out with tender crumbs
Remove from the oven and let cool
Decorate with confectioner's sugar, sifted
