Sift flour into a large bowl
Cut the butter into small pieces and mix well with the flour
Add cold water and knead until well incorporated and form a ball
Work the dough for a few more minutes with your palms to distribute the fat and form another ball
Dust with flour and wrap in aluminum foil
Refrigerate for 1 hour
On a lightly floured surface, roll out 2/3 of the dough into a circle 28 cm in diameter
Furnish a refractory mold with a diameter of 22.5 cm and press well, lifting the edges to create an undulating finish
Poke the bottom with a fork and refrigerate
Roll out the remaining dough into a circle 20 cm in diameter
Place it in a baking dish and poke the bottom with a fork
Refrigerate for 1 hour alongside the prepared mold
After that time, cover the refractory mold with the dough wrapped in parchment paper and fill with cooked rice
Heat the oven to high (200°C)
Bake for 10 minutes
Gently remove the rice and parchment paper and bake for another 5 minutes or until golden brown
Assemble the cake by placing the filling in the prepared mold, followed by a layer of whipped cream and a sprinkle of grated chocolate
Refrigerate for at least 2 hours or overnight.
