1 2kg chicken approximately

1 kg of diced tomatoes

4 eggs for the mayonnaise

Clean the chicken and cook it seasoned with salt, minced garlic, until it's tender
While the chicken is cooling, prepare a sauce with 3 tablespoons of oil, onions, tomatoes, green seasonings, and peppers
Let everything simmer with a little water until the tomatoes are well broken down
In another pan, place the milk to boil, remove the rind from the pork and add it to the milk off the heat
Add this mixture to the shredded chicken together with the tomato sauce
After cooling, finely chop the olives leaving three or four for garnish
Prepare in a blender a mayonnaise with two cooked egg yolks and two whole eggs, salt, and 1 tablespoon of mustard and enough oil to give good consistency
Place the chicken mixture into a dish and cover with the mayonnaise
Garnish with tomato and olives.
