1 kg fish filets

Sear the garlic in hot olive oil until golden brown
Remove the garlic
Add the onion, mushrooms, and cook for a few minutes, stirring frequently
Add the capers, parsley, tomato, water, oregano, and half teaspoon of salt
Cook slowly for 10 minutes, stirring occasionally
Season the fish with the remaining salt
Place the fish on top of the vegetables, cover, and cook slowly for 15 minutes or until the fish is cooked
