Grate the peeled mango and mix with sugar and lemon zest
Beat egg whites until stiff, then combine half of them with the mango mixture and add the yolks one by one
Grease a mold with the batter and fill with the cream
Bake in a moderate oven for 20 minutes
Add the remaining egg whites, sugar, and a pinch of salt to the top of the cake and return it to the oven for an additional 5 minutes
