Combine 3/4 cup of apple cider with the cinnamon, stirring until dissolved
Add the gelatin and mix well
Add the remaining apple cider
Chill in the refrigerator until thickened
Beat with an electric mixer until thickened, doubled in volume, and smooth
Peel the mascarpone cheeses and slice into thin pieces
Immediately add to the gelatin mixture
Whip the heavy cream into a stiff peak and fold into the gelatin mixture
Place on toasted bread crust
Chill in the refrigerator until firm.
