Make a rough dough by mixing flour on the counter and creating a hole in the center
Add cut-up butter, 1/2 teaspoon of salt, and mix with your fingertips to distribute evenly over the flour
Join the water and knead the dough without working it too much
The less you work the dough, the better
Let it rest in a cool place for 2 hours
Roll out with a rolling pin, cover the bottom and sides of a removable-sided pan greased with butter or margarine
For the filling: grate the cheddar cheese, add whole eggs, 1 cup of cold cream, and a pinch of black pepper
You don't need to add salt as the cheese is already salty
Pour the filling over the dough and bake in a moderate oven
Bake without opening for the first 20 minutes
Remove from the oven when golden brown
Serve warm or cold.
