Make a dough that can be opened like a roll and line an oven dish
Beat the egg whites with sugar as if making meringue
Add the mashed ricotta to the grated lemon peel, mix well and finally add the beaten egg whites
Place the filling over the dough and with the remaining dough cut strips with a pastry cutter and decorate in a chessboard pattern
Sprinkle with sugar and cinnamon
Bake in a regular oven.
