Prepare the filling: In a large skillet, caramelize the onion in butter over medium heat, stirring occasionally with a wooden spoon, until it's soft (about 10 minutes)

Mix the egg yolk with brewed coffee and brush the surface of the dough
Bake in the preheated oven until golden brown (about 35 minutes)
