    Before cooking, prepare by soaking the cod in water for at least 30 minutes.

    1/4 cup of olive oil

    3 cloves of garlic, minced

    500g of cod loin, soaked and drained (see page 58)

    3 cherry tomatoes, seeded and chopped

    1/3 cup of pitted black olives, chopped

    1/2 teaspoon of lemon juice

    1/4 cup of all-purpose flour

    1 tablespoon of chopped fresh coriander

    Salt to taste

    1 egg yolk, beaten

    Shape into a 23 cm diameter circle
