Mix the water, yeast, and sugar
Let it rest for 10 minutes
In another bowl, combine the flour and salt
Make a well in the center and add the egg, melted butter, and yeast mixture
Knead with a wooden spoon
Turn onto a floured surface and knead well

Transfer the dough to a greased bowl
Let it rest for 45 minutes or until doubled in volume
Let the dough relax for another 15 minutes before opening
Filling
Sauté the onion, garlic, and cod in olive oil until the fish is flaky
Add the cherry tomatoes and cook for 10 minutes
Stir in the olives, lemon juice, flour, coriander, and salt
Cook for another minute or until a creamy mixture forms. Reserve

Preheat the oven to medium temperature
Roll out the dough on a floured surface to a 30 cm circumference
Transfer to a greased mold and fill with the filling

Pull the edges of the dough towards the center, revealing the filling
Brush with egg yolk and bake in the oven for 35 minutes or until golden brown
