Mixture
1 and 3/4 cups all-purpose flour
2/3 cup butter, softened
3 tablespoons water
Stuffing
250 grams of sardine fillets
3/4 cup all-purpose flour
2/3 cup olive oil
1 cup diced tomatoes (seedless)
1/2 cup diced cucumber
1/3 cup finely chopped onion
1/4 cup chopped fresh parsley,
1 tablespoon grated lemon zest
1 tablespoon freshly squeezed lemon juice
3 cloves garlic, minced
To taste salt
Mixture

1 tablespoon freshly squeezed lemon juice

To taste salt
Mixture
Combine flour and butter to form a crumbly mixture
Poke a hole in the center and add water
Knead until a ball forms
Heat the oven to medium temperature
Roll out the dough and line the bottom and sides of the pan with it
Cover with aluminum foil and bake for 15 minutes
Remove the foil and bake for an additional 10 minutes or until golden brown
Remove from the oven and let cool. Reserve
Stuffing
Season the sardines with salt and coat them in flour
Heat olive oil in a pan and fry the sardines until golden brown
Drain on paper towels
In a bowl, combine remaining ingredients and season with salt
Unmold the dough onto a plate and line the bottom with fried sardine (reserve some for topping)
Cover with the stuffing and decorate with reserved fillets
Serve chilled.
