For the dough
1/2 cup of wheat flour
1 tablespoon of active dry yeast
4 whole eggs
4 egg yolks
3 tablespoons of granulated sugar
100g of butter
2 tablespoons of cold milk
Butter for brushing
Granulated sugar for dusting the dough
For the filling
1 large pineapple (or 2 small ones) peeled and grated
1 coconut grated
6 egg yolks
1/2 cup of granulated sugar

Prepare the dough
In a bowl, combine the flour and mix in the other ingredients
Mix and knead with your hands until everything is well combined and smooth
Roll out the dough to a thickness of about 1/4 inch (not too thick). Reserve
Prepare the filling
In a saucepan or large skillet, combine all the ingredients
Simmer over low heat for about 2 hours, stirring constantly with a wooden spoon, so it doesn't burn
It's done when you stir and the bottom of the pan appears
Remove from heat and let cool
Assemble
Spread the filling on one half of the dough
Cover with the other half
Trim and even the edges
Bake the cake
Bake in a moderate oven for about 20 minutes, until golden brown
Remove from oven and generously butter the top of the cake
This is done to prevent it from breaking
Let the cake cool
Cut and serve
Cut into squares and serve dusted with granulated sugar.
