One package of biscuit mix or Maria biscuits
1/2 cup unsalted butter, melted
1/2 cup sugar
1 envelope unflavored gelatin
2 cups hulled and sliced strawberries (400g)
4 egg whites
8 tablespoons confectioners' sugar

Process the biscuits in a blender to obtain a crumbly mixture
Mix with melted butter or margarine
Press into the bottom and sides of a 23 cm diameter springform pan
Bake in a preheated oven at 180°C for about 10 minutes
In a saucepan, combine sugar, gelatin, and strawberries
Cook over low heat, stirring constantly, until it thickens slightly
Remove from heat
Let cool to room temperature
Whisk the egg whites until stiff peaks form
Add confectioners' sugar one tablespoon at a time, whisking until stiff peaks form again
Fold in the strawberry mixture
Pour into the chilled biscuit mixture
Refrigerate until firm
If desired, garnish with whole strawberries
Serves 8 people.
