Wash the spinach leaves and place them in a saucepan without water
Bring to low heat with the saucepan covered for 3 minutes
Drain the water that forms and chop the spinach leaves
Refry the onion in olive oil and add the spinach
Mix quickly and season with salt and black pepper
Remove from the heat and reserve
Grease a dish with the bread slices fitting inside
Make a layer at the bottom of the dish with the bread slices and spread the spinach
Beat the eggs lightly and season with salt and black pepper
Pour over the spinach and sprinkle with grated cheese
Bake in a preheated medium oven for 20 minutes
Serve immediately.
