Prepare the meringue dough: combine 1/2 cup water with 1/4 cup unsalted butter and a pinch of salt
Heat over low heat, whisking constantly, until the butter melts
Remove from heat and add all-purpose flour, stirring quickly with a wooden spoon
Stir rapidly to prevent lumps
Pour into a bowl and mix in one egg, beating well
Add the second egg and beat until smooth. Reserve
Prepare the dough: combine 1 cup all-purpose flour and 1/4 cup unsalted butter
Mix with two knives until a crumb forms
Gradually add 1 1/2 to 2 tablespoons milk, stirring until a ball forms
Knead briefly until smooth
Roll out the dough on a floured surface to a thickness of about 1/8 inch
Cut into desired shapes and sizes
Bake in a preheated oven at 180°C for about 25 minutes, or until golden brown
Let cool and remove from baking sheet
For the cream: combine 2 cups milk, 3 slightly beaten eggs, and 1/4 cup melted unsalted butter
Cook over low heat, whisking constantly, until the mixture thickens
Remove from heat and let cool
Prepare the meringue: beat egg whites until stiff peaks form. Reserve
Melt 1/2 cup granulated sugar in a saucepan over low heat
Gradually add beaten egg whites, beating constantly, until stiff peaks form
Add to cream mixture and mix well
Use as filling for cake
For the caramel: combine 4 cups granulated sugar and 4 tablespoons milk
Cook over medium heat, stirring frequently, until caramel forms
Dip each meringue into caramel and place on a baking sheet lined with parchment paper
Let cool completely
