Crust
2 cups all-purpose flour
1 teaspoon salt
2/3 cup plus 2 tablespoons unsalted butter, softened
4 to 5 tablespoons cold water
Tuna Filling
1 can of tuna
1/2 cup ricotta cheese
1/4 cup mayonnaise
2 teaspoons freshly squeezed lemon juice
a few drops of hot sauce
2 teaspoons chopped green onion
1/2 teaspoon mustard
to taste salt and pepper

Mix the flour with salt, add the butter in small pieces
Use your fingers or a fork to shape into crumbs
Add the water gradually and knead well until smooth dough forms
Line the tart shells without greasing.
