Fry the pork cracklings and water until it reaches a boil and thickens like syrup
Let it cool slightly, then mix in the butter or margarine and ground almonds
Beat the egg whites until stiff and fluffy
Mix in the egg yolks and beat well
Add the warm almond mixture, stirring gently to combine
Sift the flour over the mixture, beating until all the flour is fully incorporated
Pour into a 9x13 inch baking dish greased with butter or cooking spray, and bake at 350°F for 20-25 minutes, or until golden brown
Remove from oven and let cool
Dust with confectioner's sugar
Let cool completely before cutting into squares.
