1 cup of sugar
4 egg yolks
1 1/4 cups of warm milk
1 baking powder tablet or 25 grams of instant yeast
1/4 cup of lukewarm water
1/2 teaspoon of salt
7 cups of sifted flour
1/2 cup of melted butter
1 egg white lightly beaten
1 tablespoon of sugar
1 cup of sugar

Gradually add 1 cup of sugar, beating well until the mixture is thick
Add the milk and mix well
Dissolve the baking powder in lukewarm water and add to the previous mixture with salt
Mix well
Slowly add 4 cups of flour, beating well after each addition
Combine with melted butter, beating until a homogeneous dough is obtained
Add the remaining flour and mix well
Cover and let rise in a protected area for 1 hour or until doubled in volume
Knead the dough
Divide into two parts
Divide each part into three pieces
Open each piece into a thin strip of approximately 40 cm in length
Make two pastries
Place on greased baking sheet; cover and let rise for 1 1/2 hours or until doubled in volume
Bake in medium oven at 35 minutes
Mix the egg white with sugar and brush over the pastries
Bake for an additional 5 to 10 minutes
