Using a food processor, grind the peanuts with skin and 100 g of sugar until you get a fine powder
Alternatively, you can also grind the peanuts in a liquidizer and add the sugar gradually
Pass through a sieve
The peanut particles that remain on the sieve will be ground again
Next, mix this peanut flour with wheat flour, butter, whole egg, and lemon zest
At first, it may seem difficult to combine all these ingredients, but with a little patience you can obtain a homogeneous mass
Note: do not add even one drop of water or milk, as it's not necessary
Cut the dough into pieces about the size of an almond and give them an oval shape similar to a fava bean
Coat these 'favas' in wheat flour and align them 20 cm apart on a buttered and floured baking sheet
Bake in a moderate oven for 20 minutes until the sweets turn a lovely golden color
Carefully remove them from the baking sheet and let them cool and dry on a wire rack
Next, you can put them in an iron pot to keep them well dried and crunchy
Note: when they come out of the oven, the 'favas' appear soft and only once cooled do they acquire this delightful crunchiness
With this recipe, you will get about 50 'favas'.
