4 1/2 to 5 cups of all-purpose flour
1 packet of active dry yeast
2 tablespoons of sugar
2 teaspoons of salt
1 1/4 cup of milk
1/2 cup of butter or margarine
2 eggs
4 1/2 to 5 cups of all-purpose flour
1 packet of active dry yeast
2 tablespoons of sugar
2 teaspoons of salt
1 1/4 cup of milk
1/2 cup of butter or margarine
2 eggs
Mix together 1 1/2 cups of all-purpose flour, active dry yeast, sugar, and salt in a bowl
Heat the milk and butter or margarine in a saucepan until the butter melts
Add the egg mixture to the flour mixture and beat with an electric mixer for 2 minutes on high speed
Gradually add 3 to 3 1/2 cups of all-purpose flour, stirring with a wooden spoon until a firm dough forms
Knead the dough on a floured surface until smooth
Place the dough in a greased bowl, cover it with a cloth, and let it rise for about 2 hours
Punch down the dough, divide it into three equal pieces, and shape each piece into a rope about 50 cm long
Lay the ropes side by side on a greased baking sheet, pressing the ends together
Shape the rope into a twist and press the ends to seal
(See how to braid, in "Secrets for a Delicious Loaf")
Let it rise again for about 45 minutes
If desired, brush with a beaten egg or yolk
Bake in a moderate oven (180°C) for 35 to 40 minutes, or until golden brown
Delivers one loaf.
