Prepare the filling: in a small bowl, mix together the ricotta, Parmesan cheese, and eggs and beat well
Roll out the puff pastry to make it thin
Cut into 2 squares of 12 x 12 cm
Place 1 tablespoon of filling in one corner of the square
Fold the pastry over to form a triangle
Moisten and press the edges together
Place on a baking sheet, without greasing, moistened with water
Bake in a hot oven (220°C) for about 20 minutes or until the pastries are puffed and golden
