1 medium onion, finely chopped
2 tablespoons of oil or olive oil
500g of fish fillets
2 tablespoons of thyme or parsley, finely chopped
1 tablespoon of prepared mustard
to taste salt
10 leaves of Brussels sprouts, blanched and without the central stem

Sear the onion in the oil until it starts to brown
Add the fish, thyme, and cook while stirring with a wooden spoon over low heat (the fish will break apart as it cooks)
Season with salt and mustard
Mix well
Remove from heat and fill the Brussels sprout leaves with 3 tablespoons of the fish mixture
Fold the ends to the center, forming small packets about 10cm long
Place the packets with the fold facing down in a greased baking dish
Brush the packets with a little mustard
Bake until hot, for about 10 minutes
Remove from oven and serve warm.
