Mixed Dough
400g white chocolate
1 tablespoon unsalted butter
1 teaspoon cherry extract
1/2 can of heavy cream
1 tablespoon honey.
Second Dough
400g dark chocolate
1 tablespoon unsalted butter
1 tablespoon honey
1 tablespoon whiskey
1/2 can of heavy cream
Filling
150g chopped cherries
Mixed Dough
400g white chocolate

Second Dough
400g dark chocolate
1 tablespoon unsalted butter
1 tablespoon honey
1 tablespoon whiskey
1/2 can of heavy cream
Filling
150g chopped cherries
Mixed Dough
Heat the heavy cream, butter, and honey over low heat until simmering
Remove
Add the white chocolate chips, stirring until melted
Add the extract and whisk
Pour into a refrigerator, cover with plastic wrap, and refrigerate
Second Dough
Prepare similarly to the first
Remove from the refrigerator, distribute the chopped cherries, top with the second dough, and refrigerate for 1 hour
Shape the truffles by filling cavities of the mold, tapping gently to remove air bubbles, and smooth the tops
Cover with paper and refrigerate with edges down for 5 minutes
Place the truffle centers on top of a layer of chocolate, cover with plastic wrap, and refrigerate until set
Release after about 20 minutes.
