2 cups of ready-made grape juice
1 cup of water
1/4 cup of sugar
3 tablespoons of cornstarch

Prepare the cream
Melt all the ingredients in a medium saucepan over low heat, stirring constantly until thickened
Assemble
Place a scoop of sorbet inside each vol-au-vent and cover with the cream.
