Ax the egg yolks and sugar in a bowl until the mixture becomes light in color
Add the Marsala wine gradually, whisking constantly
Place the bowl over simmering water, whisking slowly until the mixture thickens and begins to foam
Be careful not to cook too much
Strain this mixture through a fine-mesh sieve
Serve warm, in cups, with champagne biscuits
