1 Cut the avocado in half lengthwise
Remove the pit and carefully scoop out the fruit's pulp
Reserve the skin
2 Blend the avocado pulp with 2 tablespoons of lime juice in a blender, reserving
3 In a saucepan, mix sugar with 1/4 cup (heaping) of water
Bring to a boil, then cook until the syrup forms threads
4 Beat egg white until frothy and slowly add the hot syrup while continuing to beat until stiff peaks form
5 Add the remaining lime juice and mix well
6 Divide the avocado creme among the skins
Place spoonfuls of meringue over the creme and gently fold to combine.
