Cut the codfish into 4 cm cubes and cook it with a little water until it becomes soft but doesn't fall apart
In another pan, make a syrup-like consistency with the water and sugar
When it's ready, add the vanilla and mix well
Add the cooked codfish, well-drained and still warm, and stir gently to prevent breaking up
Let it simmer at low heat until it starts to thicken
Remove the cubes from the pan and place them on a lightly oiled surface
When they're nicely dried on one side, flip them over and let them dry on the other side.
