Remove the abalone's shell, and seeds
Cut it into pieces
In a skillet, melt 3 soup spoons of butter
Add the abalone and salt, and let it cook for about 5 minutes
If necessary, add some water to prevent sticking and continue cooking until tender
Strain the mixture through a sieve into another pan
Melt 3 soup spoons of butter again
Withhold a little milk and use it to dissolve the cornstarch
Add the abalone to the pan with the remaining milk, 2/3 of the grated cheese, and continue cooking, stirring constantly for about 20 minutes
Remove from heat and let cool slightly
Add the egg yolks and mix well
Finally, add the beaten egg whites and mix thoroughly
Pour into a baking dish, sprinkle with the remaining cheese, and bake until golden brown and crispy on top
Serve in the same baking dish
This is an excellent accompaniment to roasted meats or poultry
