6 washed and grated zucchinis

Preheat the oven
Cook the zucchinis in a little water until they are still firm but tender (about 8-10 minutes)
Drain and let cool
Cut the zucchinis in half lengthwise
Remove the seeds and flip the zucchini shells over paper towels to drain
Arrange the zucchinis with their hollowed sides up on a baking sheet lightly greased
Fill the cavities with equal parts of diced tomatoes and breadcrumbs
Sprinkle with salt, pepper, and Parmesan cheese
Bake in a moderate oven until they are hot and the cheese is melted
Serve 6 portions.
