Trim the ends and strings from the green bean cake
Wash thoroughly in cold water
Pat dry and refrigerate until ready to prepare
Rinse the mushrooms quickly
Cut off the hard part of the stem
Slice lengthwise into strips
Heat the olive oil in a pan
Add the green onion and fry, stirring for 1 minute
Add the mushrooms and fry, stirring for another 2 minutes
Add the green beans and ginger and fry for another 1 to 2 minutes, until the green bean is tender but still crisp
Add soy sauce and serve immediately
Serves 4 people.
