Boil the sweet potatoes until they're tender, then drain and mash them
Batter in the eggs, onion, salt, and white pepper
Beat until smooth
In a separate bowl, mix together the egg, cold water, oil, and salt
Beat well
Place the mashed sweet potatoes into the egg mixture and mix until just combined
Fold in the raisins, making sure they're evenly coated
Heat enough oil in a frying pan to shallow-fry the fritters for 5-6 minutes or until golden brown
Season with salt and white pepper
Serve hot
Make about 12 fritters.
