For the sauce:
1/4 cup grated Parmesan cheese
1/3 cup olive oil
3 tablespoons fresh or 1 tablespoon dried basil, chopped
1 clove garlic
For the sauté:
2 tablespoons olive oil
3 medium zucchinis, cut into cubes
1 small onion, chopped
4 tomatoes, peeled and seeded, cut into cubes
1 teaspoon salt
Chopped parsley for garnish
For the sauce:

Make the sauce: combine all ingredients in a processor or blender and blend well
Set aside
Make the sauté: in a large skillet, heat the olive oil and add the zucchini
Cook for 3 minutes, then add the onion and continue cooking for another 3 minutes
Add the tomato, salt, and cook for an additional minute
Remove from heat and mix with the sauce, stirring lightly
Transfer to a serving dish
Garnish with parsley and serve hot
