10 slices of prosciutto

8 tablespoons of grated cheese

White Sauce
2 tablespoons of butter
2 tablespoons of all-purpose flour
1 1/3 cup of milk
to taste

Chop the lettuce hearts into small pieces
Slice 2 slices of prosciutto
Season to taste and combine with half of the grated cheese
Divide the mixture among the remaining 8 slices of prosciutto
Roll up the slices and arrange in a shallow baking dish
Top with White Sauce made as follows:
Melt butter, add flour, and mix well
Add milk gradually while stirring constantly
Cook until thickened slightly
Sprinkle with remaining cheese
Bake at 275°F for 10 minutes to lightly brown the cheese
Serve with red wine.
