1.3 kg of hare in pieces

2 tablespoons olive oil
1/4 cup dry white wine
2 cans of tomato peel
3 tablespoons green olives, pitted
3 tablespoons black olives, pitted

In a bowl, season the hare with salt, pepper, garlic, and thyme
Let it rest for 15 minutes
Heat oil in a pan over medium heat, add the hare pieces, and cook until browned on all sides, about 20 minutes
Add white wine to the pan and simmer until the liquid has almost evaporated
Add the tomato peel, chopped olives, and any remaining juices from the pan
Stir to combine
Simmer the mixture for an additional 30 minutes or until the hare is tender
Taste and adjust seasoning as needed
Garnish with thyme and serve.
