2 kg of beef ribs
15 olives, pitted, sliced
7 sprigs of rosemary, chopped
5 tablespoons of olive oil
salt to taste
Sauce:
10 hard-boiled eggs
10 tablespoons of lemon juice
1/2 cup of olive oil
1/2 tablespoon of grated lemon zest
salt to taste
2 tablespoons of green pepper

Clean the beef well
Stuff the sliced olives and rosemary sprigs into the beef surface
Rub with olive oil
Place in a hot oven (250°C) for 50 minutes
Turn off the oven and let the beef sit in the oven for another 30 minutes
Season with salt
Let it cool down
For the sauce, beat the hard-boiled eggs with lemon juice
Slowly add the olive oil while beating
Finally add the grated lemon zest, chopped egg whites, salt to taste, and green pepper
Serve by cutting the beef into thin slices and serving the sauce separately
