In a large skillet, melt the butter over medium heat
Add the onion, cover, and cook for 2 minutes, or until the onion starts to soften
Add the zucchini, cover, and let it cook for about 3 minutes, stirring occasionally, until it's crispy
Add the tomato, cover, and simmer for about 2 minutes
Season to taste
Serve in 6 portions.
