Soak the celery root in boiling salted water for five minutes
Drain and reserve the liquid
Melt the butter in a non-stick skillet, add the onion and cook for five minutes or until translucent
Add the celery root and reserved liquid
Cook for 15 minutes over low heat
Add the thyme, lemon juice, and green onion
Cook for three more minutes
Serve hot as an accompaniment or cold as a starter.
