Heat the oil in a pan
Add the garlic and fry until lightly golden (about 2-3 minutes)
Add the cumin, reduce heat, and fry until the cumin is melted and golden (about 3 minutes)
Add the garlic scapes, increase heat, and cook while stirring carefully until lightly golden (about 3-5 minutes)
Add the lemon juice, reduce heat well, cover the pan, and cook while stirring occasionally for about 12 minutes
Do not let it burn
Season with salt and black pepper
Serve warm or at room temperature to accompany roasted chicken
