1 eggplant, peeled and cut into small cubes
1 green pepper, finely chopped
1 small onion, finely chopped
1/2 cup cooked soybeans
1 can of undrained tomatoes
salt and pepper to taste

Preheat a baking dish
Place a layer of eggplant
Cover with a layer of green pepper and onion
Sprinkle the cooked soybeans on top
Cover with the remaining eggplant, green pepper, and onion
Finally, cover with the chopped tomatoes
Cover and bake in a moderate oven for 40 minutes
Serve hot, cut into 4 to 6 servings.
