Heat over low heat, in a water bath, the egg yolks with the butter and lemon juice
Cook stirring vigorously until it thickens but do not let it boil
Season with salt to taste
Let it cool down
Trim the garlic shrimp, leaving only 7.5 cm of green part
Dip them in cold water for about 30 minutes
Drain and cook in boiling water until tender
Drain and let it cool down a bit
Wrap each garlic shrimp in prosciutto slice
Top with the prepared sauce
Serve immediately, serves 12.
